The Pascal Jolivet Sancerre red wine is a Pinot Noir with a texture that is extremely lively and fruity. This wine is a 100% Pinot Noir single variety, the grapes are hand sorted and destemmed. Subtle, spicy and chic, this signature 2019 Sancerre offers delicate red fruit, cherry and blackcurrant aromas and an elegant aftertaste with hints of spice.
The origin of the different terroirs, the yeasts and the slow fermentations bring a unique finesse and minerality. Sancerre is extremely pure, refined with immense subtlety. The texture of the wines is lively and extremely fruity.
Pascal Jolivet's estate covers 95 hectares between Sancerre and Pouilly Fumé. Cold maceration lasts 10 days. The vatting period is 12 to 15 days. Each soil is vinified separately in thermo-regulated stainless steel tanks.

Terroirs: A blend of limestone and clay-limestone from Bué, Champtin and Verdigny
Vinification: The hand-picked grapes are sorted on the vine, then a second time in the cellar. At least two thirds of the grapes are vinified in whole bunches, in truncated wooden vats (45 HL). The maceration takes place slowly, with pumping over to infuse our juices without seeking extraction, but rather finesse. The wine is aged in wooden vats for 8 months.
Character : A complex wine with a black fruit and spice structure, enhanced by subtle tannins. A wine for laying down.
