Pascal Jolivet sauvignon blanc is a wine made in the Sancerre appellation in the Loire Valley. This wine is made from plots of land located in the commune of Bué, facing south and at altitude, which gives this wine a richness and a "solar" touch.
The white wine Pascal Jolivet 2020 is a lively, mineral and fat Sancerre. It is a historical "cru" of the Sancerre appellation, its limestone terroir gives it freshness, minerality and salinity. This white wine, made from 100% Sauvignon Blanc grapes, has a golden colour and a complex nose that oscillates between lemon zest and spicy and mineral notes. The full, taut finish surprises with its iodine notes.

Terroir: Plot selection of the estate, 100% clay-limestone. "Terres Blanches" is the name given to the Kimmeridgian marls. Village of Boisgibault.
Vinification: Hand-picked, south-facing slopes. Each grape is sorted on reception of the harvest, we work by gravity in order to respect the natural circuit of the vinification. A light press is done, and only the free-run juice and the heart of the press are kept. Natural vinification in thermo-regulated stainless steel tanks and 8 months maturation on fine lees.
Character : Rich, dry, fruity, complex with a nice aromatic finish.
