Bourgogne Chardonnay "Les Ursulines" 2020, a soft white wine with a pleasant taste.
The white wine Bourgogne Chardonnay "Les Ursulines" 2020 of Jean-Claude Boisset is made from grapes that were pressed in whole bunches very gently for two hours. The must was dropped to 12°C before being transferred to oak, without decanting, to retain the maximum amount of lees. The must underwent a long natural fermentation using yeast. The wine was aged for 14 months without racking, to accentuate its mineral qualities. 10% new French oak barrels were used to give a subtle complexity and a smooth finish. Again, it is very rare that a "Bourgogne Blanc" is 100% aged in oak. Bottling was done using gravity after bentonite application and light filtration.
Tasting:
- Eye: Of a crystal clear light gold color, often adorned with green highlights.
- Nose : A fresh bouquet with notes of acacia, honey and yellow fruits.
- Palate: The mouth is very balanced, with good acidity and a silky texture. Citrus, pear and apple blossom are perfectly balanced by a good acidity and texture.
